Sedric Chicken made in the pressure cooker

I am going to share a family recipe that is based off of a California chicken stand. My parents have been making it since before I was born. Now I make it for my family. I have made changes to the recipe to speed it up, because like a lot of you I am rushed at dinner time on weeknights. I use my pressure cooker, one of my favorite kitchen appliances. You can also simmer it on the stove for about an hour ~ that is the way my parents made it when I was growing up. We also love this chicken as cold leftovers ~ I shred it and sprinkle generously  with salt. It makes a perfect salad topping. This always smells great on the grill and is something that my family really enjoys.

Sedric Chicken

Sedric Chicken
Serves 4

1 Cup Salsa {I use herdez}
½ Cup BBQ Sauce
Juice of 1 Lemon
1 teaspoon – 1 Tablespoon Cholula , Depending on spice desired (or your favorite hot sauce)
1 teaspoon Salt
4 Boneless/Skinless Chicken Breasts, approximately 2lbs

1. Add all ingredients to your pressure cooker. Place the lid on your pressure cooker and set vent for ‘sealing’.

2. Set timer for high pressure and adjust time to 10 minutes. Allow the pressure to release naturally for 10 minutes. When the ten minutes have elapsed release any remaining pressure. Remove lid titling it away from you.{Check to make sure your chicken is cooked to 165 degrees. If it has not return it to pressure for an additional 2-3 minutes.} Remove the chicken from the pressure cooker and loosely cover to keep warm.

3. Press the saute button and allow the sauce to simmer and reduce. You can eat the chicken straight from the pressure cooker or you can *grill it (my favorite) for just long enough to give it grill marks and a smoky flavor. Alternatively place it under the broiler for a minute basting the chicken a few times as it cooks. Serve with reduced sauce.

*I grill my chicken while the sauce reduces, I remove just enough sauce to baste the chicken leaving the rest to reduce.

        My daughter said it was a wonderful recipe, but we needed MORE chicken. Hubby was hungry and took two of the biggest pieces leaving she n I with just a little bit….

          You can certainly double the recipe for next time. Double the chicken and increase the sauce by half. It is fantastic cold over a salad if you have leftovers.
