Perfected Chickpea Salad Sandwich perfect for a picnic

My copy of Oh She Glows is so very well worn. It is one of my personal favorite cookbooks. I have quite a few recipes that are made over and over again including this chickpea salad. I LOVE it. Even better my kids do too. It is the perfect item to stuff into a wrap with some greens or sprouts and take on a picnic. My kids love going to the park and the splash pad in the summer and taking a picnic with us. After a quick lunch they are right back to playing. The little one asked several times over the winter (snow and all) when we could have a picnic at the park on the ground, she was not very impressed with indoor picnics. I shared this recipe with a friend after she learned how much my family enjoyed it. She made it and her picky six year old not only loved it but asks for it to be made by name! This is a winning combination that is perfect with for the upcoming picnic days, although it is equally delicious in the middle of winter for an indoor picnic.

Look at the rainbow of colors! I like to buy the snacking sweet peppers and use every color in this salad.

I am so excited that Angela’s second book will be released this fall. I pre-ordered it as soon as it was available. I know that it will be packed with delicious recipes like her first book. A few of our favorites from her first book are the glo bars, granola clusters, chia donuts, festive kale salad, salt and vinegar roasted chickpeas. There are so many more but I can’t list her entire book.

Perfected Chickpea Salad Sandwich

Perfected Chickpea Salad Sandwich
Serves 4
This is fantastic over a leafy salad or in a wrap.

1 1/2 Cups cooked Chickpeas or 15 oz can drained Chickpeas
2 Celery Stalks, chopped
3 Green Onions, Chopped
1/4 Cup Pickles, Chopped (I like spicy ones)
1/2 Cup Bell Pepper, chopped, I use a variety of colors, any will work
2 Tablespoons Vegan Mayonnaise (I use this one)
2 Tablespoons Yellow Mustard
2-3 teaspoons Fresh Dill, Chopped
2-3 teaspoons Fresh Lemon Juice, to taste
1/4 teaspoon Salt
Black Pepper, to taste

Bread, rolls, or Pita Chips
Lettuce, Spinach or Sprouts ~ optional

1. In a large bowl smash the chickpeas with a fork or potato masher until they are flaky. Add the rest of the ingredients through the black pepper and give it a good stir. Taste and adjust the seasonings as needed with more lemon juice, salt or pepper.

2. Assemble sandwich or Enjoy with pita chips.
