I have several recipes for steel cut oats on here already but I still have SO many more to share! We eat it so often and I like to have variety. Blueberry oatmeal is a standard oatmeal that I make often. I started out using either dried blueberries or frozen. The first time I decided to use both the oats seemed to disappear quicker. The texture in the oatmeal is wonderful. The dried blueberries are a little chewy while the frozen ones heat up and are super juicy when you bite into it. Not knowing what blueberry you will get with each bite is part of the fun!
Double Blueberry Oatmeal
1 Cup Steel Cut Oatmeal
1 1/2 Cups Water
1 1/2 Cups Almond Milk
1 Cinnamon Stick
1 Tablespoon pure Vanilla Extract
1/4 Cup Dried Blueberries
1 Cup Frozen Blueberries
Maple Syrup for serving
1. Add first six ingredients to the pressure cooker. Place lid on pressure cooker and press porridge and set for 3 minutes (or cook on high pressure 3 minutes).
2. Let rest for 10 minutes after cooking. *I have let mine rest up to 1 1/2 hours*
3. Release any remaining pressure and remove lid tilting it away from you. Stir the oatmeal. Add in the frozen blueberries. Allow to sit with lid on for one minute for the blueberries to heat up.
4. Place oatmeal in bowls discarding cinnamon stick serve with maple syrup.
