Sweet potato mushroom risotto made in the instantpot
This risotto came about when I had extra baked sweet potatoes sitting in the refrigerator. I didn’t feel like eating them as potatoes and I really wanted risotto so I thought it would be a perfect marriage. It was! Continue reading →

Black Bean Raspberry Chipotle Dip

Black Bean Raspberry Chipotle Dip inspired by So Long Saloon

When we moved to the little apple a few years ago I kept hearing about an appetizer at two local restaurants. The two restaurants share a kitchen but share very few menu items other than this dip. One is a burger joint while the other is a Mexican restaurant. I am sure you can guess my favorite of the two, we enjoy both but I do have a clear favorite: Taco Lucha. Continue reading →

Ancho Chile Lentils

Ancho Chile Lentils made in the instantpot
We eat a lot of Mexican food. This is one type of food that my entire family loves (meaning no complaining) and we never get tired of eating. I do like to change up the type of fillings that we have and these lentils have been a favorite since the first time that I made them. My husband prefers them to beans so I generally try to alternate lentils and beans when we have Mexican food. These lentils are so versatile Continue reading →

Loaded {vegan} Nachos with Sweet Potato Queso

Loaded Vegan Nachos

My little one has had the same favorite meal for years now so it came as no surprise that for her 4th birthday she wanted nachos for dinner. Her two requests: nachos and she wanted to eat it on princess paper plates. We rarely use paper plates so to her they are super special. I can’t believe that my baby is already four, time really does seem to go by way too quickly. She is so independent Continue reading →

Sedric Chicken

Sedric Chicken made in the pressure cooker

I am going to share a family recipe that is based off of a California chicken stand. My parents have been making it since before I was born. Now I make it for my family. I have made changes to the recipe to speed it up, because like a lot of you I am rushed at dinner time on weeknights. Continue reading →

Congee and Caramelized Tofu

Congee with caramelized tofu
Congee wasn’t something that I grew up eating or something that was even on my radar until recently. Until watching season 12 of Top Chef (one of my favorite shows) I never knew that it was so very versatile. Mei Lin made congee twice during season 12. I still really want to try to make a Mexican version, one of Mei’s winning dishes, since Mexican food is my favorite. I wanted to make a vegan version of congee yet all of the recipes that I found included mushrooms or vegetables that my husband will not eat. Continue reading →
